5 Back to School Lunch Ideas Lunch # 1: BBQ Chicken for Champions
- A chicken breast, cut in half and fried in olive oil for 6 minutes on each side.
- Add salt and pepper. Cut into strips. Serve cold dipped in dipping sauce.
- BBQ sauce - ¼ C (put in BPA-free container)
- Vegetables: broccoli steam for 7 minutes, let cold water run on it (or defrost frozen broccoli)
- Place in container without BPA
- Veggie sauce in a container without BPA
Use: barbecue sauce or honey
box drinks: water, GFCF * V8 juice, GFCF juice box, milk fortified organic rice
Snack if needed: GFCF chips & fruity salsa (¼ C) in a container without BPA
Toy Surprise: girls: bracelet son, Boys: Miniature Figure toy
Sipping BBQ sauce - ¼ C (put in BPA-free container)
- 1 C organic ketchup
- 1 tablespoon lemon
- 1 tsp teaspoon Worcestershire sauce (GFCF)
- 1 tablespoon honey
- Pinch black pepper
- Mix all the above until smooth
Fruity Salsa
- 1 C Salsa
- ¼ C grape, blueberry or raspberry spread
- Mash the spread of fruit salsa
DLT # 2 ("Deli" meat, lettuce and tomato sandwich)
- GFCF chicken or turkey without preservatives in meat organic lunch (for boar's head, Applegate or Shelton)
- Toast two pieces of bread GFCF.
- Spread w / 1 tablespoon of mayonnaise GFCF
- Place 2 slices of cold meat GFCF
- Top with lettuce and tomato
- Cut into 4 squares
- Wrap in waxed paper
GFCF Potato Salad 1 / 3 cup recipe. Serve in a bowl without BPA
Fruit (apples or grapes) - in a container without BPA
Drink: water, GFCF V8 juice, GFCF juice box, milk fortified organic rice box
Toy Surprise: pet hair for girls. baseball cards for a boy.
Snack if needed: peanut butter on rice crackers
Potato Salad GFCF
Ingredients
- 3 pounds potatoes, cooked until tender, cubed, cooled
- Optional: 5 or 6 hard boiled eggs, cooled, coarsely chopped
- ¼ to ½ cup chopped red onion
- ¼ to ½ cup chopped celery, optional
Dressing:
- ¾ cup mayonnaise
- 1-2 tablespoons prepared mustard GFCF
- salt and pepper to taste
