Perfect steak ...? You need iron, heat, and a glove really good to make the perfect steak, but it's really perfect.
Preheat oven to 500 degrees F (very hot oven produces a juicy interior). Place cast iron skillet in the oven. When the oven reaches 500 degrees in temperature, remove pan from oven and place on range over high heat (the pan and the handle is very hot - be careful).
immediately place steaks in the middle of hot, dry pan (if cooking more than one piece of meat, add the pieces carefully so they do not touch each other). Bake 1-2 minutes without moving, turn with tongs and cook another 1-2 minutes. Remove from heat and put the cast iron skillet with the steaks in the oven. Cook 3 to 5 minutes more depending on thickness of steaks and doneness you like. When the steaks are crusty and charred done to your liking, remove from pan, cover loosely with foil and let rest 5-10 minutes before serving. Meanwhile, the meat continues to cook (meat temperature will rise 5-10 degrees after removing from oven) and the juices redistribute
I like mine medium ..
24 oz, dry aged Porterhouse at least 20 days, and seasoned with Emeril's essence, then rubbed with garlic oil and olive oil and left overnight before grilled over hot coals to a medium-rare.

Here's how:
That the scope steak room temperature.
Cut the steak of excess fat. Strips of fat should be 1 / 4 inch thick.
Wash with clean water.
Season to taste. Some cracked pepper, garlic powder, what you want.
Preheat the grill. High gas grill or a single layer of coals of charcoal white.
Oil the grate.
Place steak on grill and close the lid for one minute.
Lift the lid and turn steak over. Close the lid and continue cooking for a further minute.
Turn again and continue for 2 minutes, plus 1 per 1 / 2 inch (1 1 / 2 inch is equal to 5 minutes).
Turn for the fourth time and continue cooking for 2 minutes, plus 1 per 1 / 2 inch.
Check for doneness with a meat thermometer.
Let steak rest for 5 minutes before serving.
Tips
To oil the grill, you can take a piece of steak fat in a pair of tongs and rub it on the hot grill.
Let the steak rest before eating is an important trick. This allows the juices to seep into the meat and gives you a much more flavorful steak.
im originally from England but moved to the States 10 years ago like a good way to New York steak with fried mushrooms and band peas while watching the Food Network (sad but true) just taste better lol
