Fireplaces UnlimitedWhat is the best way to keep a cat out of the kitchen counter?

My cat loves the counter, only his second favorite place to play is the fireplace. I wake up every morning or home from work to find a black Pawprints on the counter. I allow my cat, which is always kept inside, almost unlimited freedom. The counter is a place that I defend. I tried double sided tape (it's more of a problem for me than him), water in the cookie sheets lined around the fight against the edges (if there is multiple sheets), pressing with a water gun (I can only follow so hours a day, and waits until I'm away), shouting and even light slap on his rear. SPRAY gourd! This stuff is amazing. My cat used to chew ropes and go on the counter, but once I started spraying the cords and counters with Bitter Apple spray, it stopped! It is not toxic or anything, and as far as I know, has not been scented to humans. It is available in most pet stores.
