Can I use disinfectants to dry if I'm cooking steak in a frying pan? I tried to use some dry rub on a steak rubbed with a little oil and I grabbed the pan, but he ended up having a black hull burned instead of a yummy brown crust. Are dry rubs for the grill?
Your warmth was probably too high. Dry rubs are great even when you bake, roast, spit, grill, etc. that must rub particular has some sugar in it too.

You have just discovered how to blacken your steak essentially.
When you use a dry rub on a steak, you're going to cook in a pan, increase the amount of fat in the pan so that the bottom of the pan is completely covered. Sear meat on a medium-high heat and finish in oven temperature to your preference.

If you can not take your steak at the temperature you want in a short period of time you must use a different cooking method
seems that your stove is too hot ... rubs work on fried meat only important to have enough oil in the pan to capture the steaks, but not burn. a little oil goes a long way!

Any spices or dried herbs that are "fried" in a skillet burn. For frying, I use a marinade rather than a rub. Rubs are made primarily for grilling surface which will not receive a direct heat source.
