Do you have a favorite recipe BBQ Chicken? My neighbor gave me an easy give an impression but it involves cooking with Coca-Cola, which sounds a bit gross for me. I do not know if I'll try this one, but the home cooked chicken, barbecue is good solid tonite ...... favorites you care to share?
I'll give you this recipe because of the brine in question. I did this a couple of weeks ago, and it was the most delicious BBQ chicken I've ever done .. The meat was juicy and falls off the bone ... but I used a good "OLE Kraft BBQ sauce bottle to make life easier. You can use the sauce recipe, but I was low on ketchup.
*** *** The Ultimate BBQ Chicken
Brine
2 quarts water
2 tablespoons kosher salt
1 / 4 cup brown sugar
2 cloves garlic, crushed with the side of a large knife
4 sprigs fresh thyme
6 chicken legs and thighs, still connected, bone, skin, about 10 ounces each
The Ultimate Barbecue Sauce:
1 slice bacon
1 bunch fresh thyme
Extra-virgin olive oil
1 / 2 onion, chopped
2 cloves garlic, minced
2 cups ketchup
1 / 4 cup brown sugar
1 / 4 cup molasses
2 tablespoons red wine vinegar or white
1 tablespoon dry mustard
1 teaspoon ground cumin
Pepper 1 teaspoon smoked paprika or if they are available
freshly ground black pepper
For the brine in a bowl, combine water, salt, sugar, garlic and thyme. Transfer the brine to a bag 2 gallon size plastic bag. Add chicken, close bag and refrigerate 2 hours (if you only have 15 minutes is fine) to allow the salt and seasonings to penetrate the chicken.
Meanwhile, prepare the sauce. Wrap the bacon around the bunch of thyme and tie with kitchen twine so you have a bundle of Nice. Heat 2 tablespoons oil in a large saucepan over medium heat. Add the thyme and simmer 3-4 minutes to render the fat and give the sauce a smoky taste Nice. Add the onion and garlic and cook gently without browning for 5 minutes. Add remaining ingredients, give the sauce of noise, and turn heat to low. Cook gently for 20 minutes to blend flavors. Once the sauce is done cooking, remove about 1 1 / 2 cups of sauce and reserve to serve alongside the chicken to the table. The rest of the barbecue sauce will be used to form the legs.
Preheat oven 375 degrees F.
Preheat grill pan or outdoor gas or charcoal grill to a medium heat. Take a towel and sometimes several times to make a thick square. Blot a small amount of oil on paper towel and carefully and quickly wipe the hot grates of the grill to a nonstick surface. Take chicken from brine, dry on paper towels. Arrange the chicken on preheated grill and cook, turning once halfway and cook for a total of 10 minutes. Transfer the chicken to grill marked a cookie sheet and bake. Bake chicken for 15 minutes, remove from oven and generously brush each square centimeter of coating the legs with the barbecue sauce and return to oven for 25-30 minutes longer, basting the chicken halfway through the second time the remaining cooking time. Serve with extra sauce.
Simply marinate sauce with my favorite.
Make a mixture of chili sauce tomato sauce
Add salt and pepper and herbs and spices you like.
I usually add a little chopped garlic and dried tarragon.
Marinate the chicken for 1-2 hours, grill and enjoy.

A simple recipe that I like is that you are using ketchup, brown sugar, a little vinegar, sauce worcheshire, soy sauce, and a little liquid smoke. Most of these you'd have in the house hold you do not really need to smoke. I do not have exact measurements because I do it different every time. In a small saucepan mix.
